Sky22 at Courtyard by Marriott Singapore Novena launches a new Sin-Ma Set Dinner. Culinary signatures from Singapore and Malaysia’s diverse food cultures meet for a melting pot of flavours and aromas in a delectable menu, with set dinner options for two or four persons that includes a range of starters, soups, mains and desserts.
Chef’s signatures include the piquant Penang Laksa with rich tamarind-spiced broth and wok hei-laden Penang Char Kuay Teow. Expect a showcase of crowd favourites such as savoury Beef Cheek Rendang featuring tender slow-braised beef, Black Pepper Tiger Prawns and fragrant Kurobuta pork Satay Bohong.
With Executive Chef John Chye’s continuous effort to promote a farm-to-table environmentally sustainable practice with use of locally produced sources, items such as locally-farmed red snapper for Changi Ikan Sumbat Sambal, Lim Chu Kang grey mullet for Otak-otah Croquettes and locally-farmed mushrooms, featured on the menu. As part of Marriott International’s Serve 360 goal of responsibly sourcing 100% cage-free eggs by 2025, only cage-free eggs are used in all our dishes.
“The Sin-Ma menu is close to my heart because it symbolizes my culinary journey over the past two decades. I crafted a menu which combines the best of both cuisines, in celebration of the common love of food among Singaporeans and Malaysians”, says Executive Chef John Chye, whose foray into the culinary world began in 2000 from his hometown Penang in a humble restaurant. In 2008, driven by his love for good food and cooking, Chef John ventured beyond the comforts of his home country Malaysia to work in Singapore, seeking culinary progression and further developed his skills, eventually joining Courtyard Marriott Singapore as Executive Chef in 2017.
Singaporean and Malaysian cuisines combine the characteristic elements of local culinary fare, and are reflective of their multi-ethnic population of Chinese, Indian, Peranakan and Eurasian. Dishes in the Sin-Ma menu is reflective of our racial and religious make up. Come as a couple or a group of family or friends to savour comforting and familiar flavours, over sharing of good times.
