1. Spaghetti Sausage Bolognese

  • Cooking time: 30 mins

The ingredients for this recipe include:

  • 4-6 sausages
  • 1 tbsp. of olive oil
  • 1 diced onion
  • 14 oz/400 grams of chopped tomatoes
  • 2 tbsp. of tomato purée
  • 5 fl. oz/150 ml of red wine
  • Half a teaspoon of oregano
  • 1 teaspoon of dried chili flakes (or none if you don’t like it spicy)
  • 9 oz/275 g of dried spaghetti 
  • Grated parmesan and basil leaves for dressing

Cooking instructions:

  • Take the sausages out of their skins, then fry them. Afterward, let the diced onion simmer in oil and cook for 10 minutes on medium heat, cook until it’s light brown.
  • Use two spoons to mince the sausages’ meat, until they turn to small pieces. Do this while the sausages are cooking. Next thing, add the chili flakes if you want a little bit of spiciness, or not if you don’t fancy it.
  • Moving on, add tomatoes, tomato purée, red wine, and oregano. Decrease the heat to a gentle simmer, and cook the mix for 10 minutes. Stir regularly. 
  • Meanwhile, cook the pasta till al dente (depending on the pack’s instructions). Cook it in a saucepan with some water.
  • Drain the water from the pasta’s saucepan, then add the sausage mix on top of it. Mix it up properly, then serve it with some parmesan and basil on top.

2. Mediterranean Quesadillas

Ever tried Mediterranean-flavoured quesadillas? This recipe serves up a Greek quesadilla to excite your palette. Again, this is very easy and quick to make, so there won’t be a lot of fuss to cook it up. This recipe needs:

  • Prep Time: 10 mins
  • Cooking Time: 5 mins

 The ingredients for this one are:

  • 8 tortillas
  • 1 red onion
  • 2 roasted red peppers 
  • 1/2 cup of black olives
  • 2 cups of shredded mozzarella 
  • 1/2 cup of feta cheese crumbles
  • 1 1/2 tbsp. of fresh chopped oregano or 2 teaspoons of dried oregano
  • 2 cups of fresh spinach

Cooking instructions:

  • Slice the spinach, roasted red peppers, red onion, and olives finely, then chop the oregano if you have fresh herbs.
  • Stuff a tortilla for each quesadilla, then spread ¼ of spinach, roasted red peppers, olives, red onion, mozzarella, feta cheese, and oregano.
  • Heat a pan over medium heat for a few minutes, then place the tortilla on it. Place another tortilla on top. Afterward, cook it until it’s brown on the bottom before flipping it and cooking the other side until it’s brown as well. Each side only needs to be cooked for a few minutes.
  • Remove the tortilla from the plan and cut it into smaller pieces. If you’re making more, use the oven to heat them at 300 fahrenheit. 

Thai Rice Noodles

This recipe serves up bits of vegetables and chicken mixed up in rice noodles prepped up in the oriental-flavored sauce. Craving some Asian cuisine? Then look no further. This one is easy and quick, it will need:

  • Prep time: 20 mins
  • Cooking times: 15 mins

Moving on to the ingredients, Thai Rice noodles will require:

  • 2 tbsp. of corn starch
  • 6 cups of chicken broth
  • 1 ½ tbsp. of water
  • 1 tbsp. of fish sauce
  • 2 ½ tbsp. of soy sauce
  • 2 teaspoons of vegetable oil
  • 1 tbsp. of rice vinegar
  • 1 tbsp. of Sriracha
  • 2 cloves of diced garlic
  • 2 teaspoons of crushed ginger root
  • 1 pack of thick rice noodles
  • 1 cup of sliced zucchini 
  • 1 cup of sliced red bell pepper
  • 2 chicken breasts (cooked and cut into small pieces)

Cooking instructions:

  • In a small bowl, stir water and cornstarch together in a mix.
  • Then to a large pot, pour chicken broth, then place cornstarch and water mixture in, along with the soy sauce, fish sauce, rice vinegar, Sriracha, ginger, garlic, and vegetable oil. Cover the pot and let it boil.
  • Then, place rice noodles into the pot and cook on medium heat for 5 to 10 mins. Afterward, place chicken, zucchini, and red bell peppers into the pot, and cook for 5 more mins.
  • Turn off the heat and let it sit for 5 minutes before serving.
