Singapore Marriott Tang Plaza Hotel CNY Feasts – Wan Hao Chinese Restaurant Prosperous Set Menus (16 January to 2 March 2018)

Award-winning Executive Chinese Chef Brian Wong is definitely pulling out all the stops to wow you and your loved ones with his bespoke CNY Set Menus. Masterfully-crafted to ring in the Lunar New Year with grand celebrations overflowing with happiness, abundance and prosperity, he and his team strive to transform your reunions into jubilant celebratory feasts! We were definitely wowed by his Giant Year Of The Dog Yu Sheng. It should hardly feed into our frames! 

Chef Brian Wong cheekily explained that this fabulous display is for our eyes only. The actual Lobster, Scallop, Salmon, Tuna and Caviar Yu Sheng With Kumquat Sauce 至尊鱼生捞起, 金桔鱼生酱 (Large: $268++) that would be served at Wan Hao is presented below. Instead of the traditional plum sauce, Kumquat Sauce is used because it has a sweet yet refreshing and zesty twist, and Kumquat symbolises abundance and good fortune. That’s not all, adding that gratifying crunch and texture, crispy fish skin is added to the Yu Sheng.

Before we got started on the Yusheng, our dear host offered sincere well-wishes such as 恭喜发财 “Gong Xi Fa Cai” meaning “Congratulations for your wealth” or 万事如意 “Wan Shi Ru Yi” meaning “May all your wishes be fulfilled” to everyone. Next to be presented was another of Lunar New Year must-haves – Wan Hao’s Imperial Pot of Prosperity with Crispy Oyster, Braised Irish Duck and Pig Trotter 黄金盆菜 (Large: $1088++, Small: $688++). This hearty casserole is filled with 14 luxurious treasures such as Australian 3-head Abalone, Crispy Oyster, Braised Irish Duck, Whole Pig Trotter, Conpoy, Sea Cucumber, Fish Maw, Japanese Shiitake Mushroom, Black Moss, Iberico Meat Ball, Baby Chinese Cabbage, Black Moss, Mustard Greens and White Radish.

The dish was so sumptuous that even the individual servings looked like the main entrée on its own. Brimming with gastronomic goodness, every mouthful combines a perfect marriage of flavours and textures. Expect a delightful crunch from the Crispy Oyster, perfectly Braised Irish Duck with a supple and flavourful bite, irresistible Pig Trotter that is full of collagen and springy Iberico Meat Ball.

Braised Bird’s Nest With Assorted Dried Seafood Broth & Golden Superior Stock was up next. I am not a fan of bird’s nest personally but I am sure the generous portion of the prized delicacy would make hardcore bird’s nest lovers go wild. 

Deep-fried Lobster with Yuzu Mayonnaise and Broccoli was a refreshingly delightful dish to crunch on. Not many chefs deep-fried their lobsters, this is definitely a first for me.

We love the soft tender morsels of Braised U.S Short Ribs in Japanese Light Soya Sauce. It reminded me of my favourite beef cheeks dish.

Despite being one of the last few dishes, Crispy Pork Trotter with Wolfberry Sauce displayed in vibrant colours against a fiery giant red bowl really roused our appetite. We are sorry for being overly obsessed with the unbelievable crispy pork trotters, the vegetables are more like garnishes to us.

Our feast ended with a simple but refreshing bowl of Chilled Lemongrass Jelly with Lemon Sorbet.

Overall, we adore Singapore Marriott Tang Plaza Hotel CNY Reunion Feasts and all of us got to bring home delicious Nian Guo Tarts!
