Jade Lunar New Year 2023 – Celebrate With A Bountiful CNY Feast

Start the Year of the Rabbit on a note of abundance with a feast at The Fullerton Hotel Singapore’s Jade, served from 3 January to 5 February 2023. Chinese Executive Chef Leong Chee Yeng says, “Lively and sociable, these lovable qualities of the rabbit reveal themselves in this year’s Jade Lunar New Year 2023 specialities, which will surely delight and charm everyone in the family.”

The quintessential starter is the Premium Gold Rush Yu Sheng, arranged into an endearing image of a white rabbit. Served with a choice of Norwegian smoked salmon or plant-based salmon, the fresh ingredients are elevated by champagne jelly, shallot oil and kumquat dressing, achieving a balance of rich and refreshing flavours.

The Gold Rush Yu Sheng makes a strong impression too. It is presented alongside a hand-drawn rabbit motif and a Chinese calligraphy greeting, written using five-spice powder—a signature finishing touch by Chef Leong.

The Gold Rush Yu Sheng is available in three portion sizes, priced from S$78* for the small portion. The Premium Year of the Rabbit Gold Rush Yu Sheng is priced at S$688* with a minimum three-day advance order. Both versions are served with a choice of Norwegian smoked salmon or plant-based salmon and are also available upon request at Town Restaurant and The Courtyard in The Fullerton Hotel Singapore. 

The Eight Delights Pot (S$88* per person) delivers a moreish pen cai experience in individual portions, each comprising an assortment of braised ingredients: abalone, fish maw, sea cucumber, flower mushrooms, dried scallop, pork tendon, Chinese cabbage and yam.

For larger groups, the Premium Braised Pen Cai (minimum five persons, S$98* per person) brims with a lavish bounty: ten-head South African whole abalone, diced giant grouper, fish maw, sea cucumber, dried scallops, braised whole pork knuckle, dried oysters, flower mushrooms, roasted duck, diced chicken, prawn, fresh bean curd stick, yam, lotus root, Chinese cabbage, leek, chestnut and pork tendon. A one-day advance order is required.

No traditional Lunar New Year feast is complete without fresh seafood. For starters, Chef Leong’s new Deep-fried ‘Honeycomb’ Hokkaido Scallop with Spiced Salted Egg Yolk (S$15* per piece) is encased within a crisp honeycomb-like batter, awakening the eyes and appetite.

For the main course, the Trio of Live Red Grouper (S$280* per fish) showcases the versatility of the fish in three ways: with a light garnish of minced ginger and spring onion; coated with a hawthorn sweet and sour sauce; and simmered into a fragrant rice wine fish bone soup. The wok-fried Radish Cake with Shajing Oyster in house-made X.O. Chilli Sauce (S$18* per person) rounds off the savoury fare on a satisfying note.

The repast concludes sweetly with Hot Cream of Almond with Bird’s Nest (S$42* per person), a luxurious take on the classic dessert, alongside adorable Rabbit-shaped Sesame and Peanut Muah Chee (S$8* for two pieces). This year’s medley of traditional petit fours includes the well-loved Steamed Osmanthus Nian Gao and Deep-fried Rose-scented Water Chestnut Cake (both S$8* for three pieces) that will leave a delicate, floral finish on one’s palate.

For families celebrating at home, Chef Leong has curated two new six-course takeaway bundles. The Jade Harmony Bundle (S$418 nett) is ideal for five persons featuring traditional dishes like roasted duck and braised ten-head South African abalone with sea cucumber.

Celebratory Buffets, Brunches and Reunion Dinners

Town Restaurant at The Fullerton Hotel Singapore will be serving a free-flowing Lunar New Year Dinner Feast daily. Buffet highlights include braised duck with chestnut and Chinese mushroom, and a selection of roasted meats: pork char siew, crispy pork belly and roasted chicken. For dessert, the line-up includes symbolic staples like osmanthus jelly, Eight Treasures pineapple entremets, glutinous rice balls served in warm red bean soup, and more. On the eve and first three days of New Year, diners can also ‘lohei’ with smoked salmon Yu Sheng served to each table.

Throughout the season, Town Restaurant’s Sunday Brunch and Lunch Buffet menus will also be elevated with celebratory dishes, such as spicy chilli crab with deep-fried mantou and wok-fried black pepper slipper lobster.

At The Fullerton Bay Hotel Singapore, an elegant six-course Reunion Dinner will be served beneath The Clifford Pier’s historic arches. The communal-style feast begins on an auspicious note with Norwegian smoked salmon Yu Sheng and Hokkaido scallop confit, followed by thoughtfully curated Chinese dishes like double-boiled chicken broth, steamed cod fillet, braised pork belly with mantou, and more. The meal concludes sweetly with a dessert buffet, including jasmine tea poached pear, pulut hitam with coconut cream and an assortment of Lunar New Year goodies.

On the first two days of Lunar New Year, The Clifford Pier’s International Afternoon Tea Buffet takes festive indulgence to a new height. In addition to delicate sandwiches and pastries, the generous spread will satiate any appetite with Chinese-style barbequed meats, hand-pulled la mian in beef or pork collagen broth, and a selection of Peranakan dishes—from Nyonya laksa to babi pongteh. Classic Lunar New Year dishes are not forgotten, such as stir-fried yam abacus seeds, Norwegian smoked salmon Yu Sheng and braised Tianjin cabbage with dried oysters and ‘Fa Cai’ black moss. Western fare, such as slow-roasted Australian beef striploin in red wine wine sauce, lend a balance to the feast.

For a less conventional celebration, La Brasserie will present traditional ingredients with a French twist in its 4-course Set Dinner, beginning with Hokkaido scallop carpaccio topped with caviar, grapefruit and herb essential oil. On the eve, diners at La Brasserie can enjoy a head start on reunion feasting with the Lunar New Year Brunch.

Crafted for leisurely reunions, Lunar New Year-themed Afternoon Tea will be served at The Courtyard in The Fullerton Hotel Singapore and The Landing Point in The Fullerton Bay Hotel Singapore.

For a touch of celebratory sparkle, guests can sip on a complimentary glass of champagne or sparkling tea, in addition to the selection of loose leaf TWG teas and coffees from Bacha Coffee. Staying true to the ritual, each set will be served with freshly baked scones, clotted cream and jam.

At The Courtyard, the Lunar Traditions Afternoon Tea includes symbolic treats like pineapple almond frangipane tart, sakura lychee entremet and Eight Treasures cake with candied kumquat. From Thursday to Sunday, a live harp performance will lend an ethereal touch to the afternoon interlude.

At The Landing Point, the Spring Expressions Afternoon Tea evokes the joy of a new beginning. The savoury repertoire will delight with auspicious treats like soy-glazed baby abalone and Hoisin duck with ginger and scallions, while the desserts are equally exuberant, crafted with a palate of bright flavours like mango, calamansi, apricot and candied ginger. Guests can enjoy the afternoon rendezvous with a live piano performance daily.

Traditional Staples from Jade

Along with the Great Treasures Pen Cai (S$688 nett, suitable for six persons) and Gold Rush Yu Sheng (S$158 nett, suitable for eight persons) available for takeaway, well-loved signatures make their return too: the best-selling Yam Paste Nian Gao Tarts (S$42 nett per box of nine); the savoury Fortune Radish Cake (S$42 nett, 800g); the Harmony Koi Fish Osmanthus Nian Gao (S$38 nett, 600g) and the Rose-scented Water Chestnut Cake (S$42 nett, 800g)—classic desserts refined with delicate floral notes.

Contemporary Creations from The Fullerton Pastry Kitchen

Executive Pastry Chef Siddharth Prabhu presents the Fortune Treasure Bowl (S$128 nett), specially crafted for sharing during Lunar New Year visits. Robed in red with a sprinkling of edible gold dust, the radiant dessert combines traditional ingredients for an outcome that is in turn nostalgic and captivating: dried longan, red dates, candied ginger, pistachio, wolfberry, pineapple mousse and orange cremeux, rounded off with the warm toffee-like notes of Gula Melaka.

Executive Pastry Chef Prabhu has also dreamed up a trio of single-portion cakes to delight relatives and friends while honouring tradition. Presented as the auspicious fruit, the Mandarin (S$12 nett) bursts with fragrant notes of mandarin curd and lychee mousse, layered with raspberry chiffon and almond frangipane. The Firecracker (S$16 nett) makes a loud greeting in red, filled with 70% dark chocolate mousse, hazelnut praline cremeux and crunchy feuilletine. Completing the trio is the Jasmine Yuzu Brew (S$15 nett), shaped as a delicate Chinese teapot. With its invigorating medley of yuzu and jasmine tea-infused mousse, grapefruit jelly and citrus financier, it pairs beautifully with a cup of tea.

The Fullerton Bak Kwa

In addition to the original flavour, The Fullerton Bak Kwa (S$68 nett, box of 12 pieces) is available in a new truffle flavour (S$88 nett, box of 12 pieces) this year, made using premium Brazilian hog shoulder. Marinated for over 24 hours in a unique blend of truffle oil and spices, the hand-sliced meat is grilled in the traditional two-stage method, beginning in a charcoal-fired oven over large bamboo trays. Sourced from the high mountains of China, the bamboo imparts a light earthy scent, balancing out the heavier charred aroma from the second stage, open-fire charcoal grilling. The well-marbled cut lends perfectly to the slow-cooking process—resulting in a tender and aromatic outcome, with the rich umami of truffle.
