The Tuna Ceviche with Ikura draws inspiration from the Koi Pla, a beloved raw fish salad from northeast Thailand. This dish features high-quality yellowfin tuna that has been marinated in a citrus-based mixture, which gives it a bright and refreshing flavour. It is served with a creamy coconut sauce that has been infused with kaffir lime leaves, adding a subtle floral note; the use of finger lime adds a burst of citrusy flavour, while the addition of ikura (salmon roe) brings a pop of brininess to balance out the dish. The result is a creation that is both exotic and unique, showcasing the delicate flavors of the tuna.
A fusion of traditional crab cakes and elements of Asian cuisine, the succulent, golden brown Eden Crab Cakes are made with a mix of herbs and spices that elevate the dish to a whole new level of taste and texture. During The Journey, popular mains include the likes of Satay Lamb Rack ($40++), Chef’s delicious take on the traditional favourite Lamb Satay. The lamb racks are marinated in a fragrant blend of spices and seasonings to create an irresistible, yet familiar flavour, then gilled to perfection. For the perfect pairing, this juicy racks are served with charred broccolini, adding a touch of smokiness and a satisfying crunch to the dish. We’ve created a homemade peanut sauce that perfectly complements the lamb and broccolini.
Also in the spotlight is the Salmon Spicy Coconut ($32++), a delicacy that embodies a harmonious blend of the earthy flavors of Asia and the exotic spices of the tropics. Imagine perfectly seared, tender salmon swimming in a pool of spicy coconut curry sauce, with a crispy skin that crackles under your fork.
