Firing up one of Christmas’s quintessential delicacies with the interplay of citrus fruits, maple and liquor, the savoury-sweet Orange-Maple Christmas Turkey with Grand Marnier Sauce is a must try. Marinated overnight and roasted for an approximate of three hours, the maple and orange add seasonal cheer to the mix and are complemented by aromatic sage and thyme. The butter brings all the ingredients together, making a caramelised, flavourful and slightly sweet turkey that enlivens your celebration. To complete the indulgence is Braised Endives with Orange & Kumquat.

2. Stuffed Turkey Breast with Baby Spinach & Parma Ham, Caramelised Apple, Semi-Dry Apple & Calvados Sauce ($86)

Presenting a healthier option is the Stuffed Turkey Breast with Baby Spinach & Parma Ham, Caramelised Apple, Semi-Dry Apple & Calvados Sauce. Stuffed with mushroom and spinach, the lean turkey breast is wrapped with Parma Ham and sous vide for one and a half hours – retaining the lusciousness of the turkey breast while elevating the flavours of the turkey to new heights.
