Celebrate the Renaissance in Chinese fine dining at Cassia, Capella Singapore! Starting 1 May 2015, guests can enjoy a unique mouth-watering five-course duck set menu that has been intricately designed under the culinary stewardship of Executive Chinese Chef Lee Hui Ngai to showcase this delicacy and its rich flavour, thin crispy skin and succulent meat.
Chef Lee’s Oriental Duck Experience menu features four iterations of the duck and closes with a homemade traditional dessert. The meal commences with a Combination platter showcasing Peking duck, Marinated duck with plum sauce and Green mango duck. The second course is a Duck meat, celery and wanton soup followed by Pan-fried American duck breast with mashed potatoes. The meal will crescendo with the option of either Braised Ee-Fu noodles with conpoy and sliced duck or Fried rice with diced duck meat and olive vegetables. Last but certainly not least is a refreshing Chilled fresh mango cream, sago and pomelo dessert that will cleanse the diner’s palate.
Guests will also have the opportunity to enjoy a half or whole Peking Duck, which will be prepared tableside and served in two courses in Cassia’s modern, sophisticated living room that blends the warm and cool tones of plush fabrics beautifully designed by Interior Designer Andre Fu.
The five-course Peking duck menu is available from 1 to 31 May 2015 for $79++ per person. Half a Peking Duck is priced at $34++ and a whole Peking Duck is $68++.
